Smoked Jackfruit BBQ

Young jackfruit is marinated in a smoky BBQ spice blend and then hot smoked until it develops a wonderfully fibrous texture and a deep smoky aroma. Smoking with apple and cherry wood gives the jackfruit a fruity-smoky note that perfectly complements its mild natural flavor. The result is a dish that looks and tastes deceptively similar to classic pulled pork.

Instructions
Preparing the jackfruit
20 minutesRinse the canned jackfruit thoroughly, squeeze well, and pull apart into fibrous pieces by hand. Pan-fry in a hot pan without oil over high heat until the surface is slightly dry and golden brown.
Seasoning and marinating
1-2 hoursMix the BBQ rub from all dry spices. Drizzle the pan-fried jackfruit with soy sauce and apple cider vinegar, then thoroughly massage in the rub. Let marinate for 1-2 hours.
Smoking
3-4 hoursPreheat the smoker with apple and cherry wood chips to 115-130 °C. Spread the seasoned jackfruit on a grill mat or in a cast-iron pan on the grate and smoke until it reaches a deep brown color and a core temperature of 75-80 °C. Turn every 45 minutes.
Finishing and serving
10 minutesMix the smoked jackfruit with your favorite BBQ sauce and briefly caramelize in a pan over high heat. Serve on buns with coleslaw or use as a topping for tacos and bowls.
Pro Tip
Pan-fry the jackfruit pieces in a hot pan without oil before smoking – this removes excess moisture and gives the surface a better texture for absorbing the smoky flavor.
